Cherry Ripe ice cream slice

Cherry Ripe ice cream slice is delicious, super easy to make and a family favourite during the summer. Try this recipe below with the kids while the weather is still warm.



  • 400g malt/coffee milk biscuits
  • 600ml thickened cream
  • 395g condensed milk
  • 3 x 85g Cherry Ripe bars, chopped



Step 1   Line a 20cm x 30cm lamington pan with baking paper or glad wrap.

Step 2   Arrange a layer of biscuits over base of pan.

Step 3   Beat cream in a medium bowl with electric mixer until soft peaks form.

Step 4   Fold in condensed milk and chopped chocolate bars. Spread over biscuits in base of pan and smooth top.

Step 5   Cover filling with another layer of biscuits.

Step 6   Cover the pan and freeze for several hours or until firm.

Step 7   Cut between the biscuits into slices and dust with icing sugar or drizzle with melted chocolate before serving.
