Healthy Chocolate Brownie | Centenary Nannies and Babysitters

The healthy brownie does exist!
We all know how hard it can be to get the children to eat vegetables. Did you know that there are some amazing and ingenious ways to sneak vegetables into even the most delectable treats? At Centenary Nannies, we have been doing our research.   The first recipe we are sharing is divine! Believe it or not, it actually contains Zucchini! From looking at it, to tasting it, you would never know that it is packed full of greens. Try it for yourself by following the recipe below. You won’t have to sacrifice on taste or be disappointed.

Secret Healthy Chocolate Brownie

What you will need
1 ½ cups of coconut sugar
½ cup of olive oil or coconut oil
2 tsp vanilla extract
2 cups (300g) self-raising wholemeal flour
¼ cup cocoa, sifted
2 eggs lightly beaten
1 tsp himalayan salt
2 cups finely grated zucchini
1 cup chocolate cacao nibs
3 tbsp. pure icing sugar

Method
1. Preheat oven to 180C (160 fan-forced). Line a 20cm x 20cm cake tin with baking paper and set aside. In a bowl, combine sugar, oil, vanilla, flour, cocoa, eggs and salt.
2. Stir in the zucchini and cacao nibs until well combined.
3. Pour mixture into prepared tin.
4. Bake for 30-35 minutes or until cooked through. Cool and sift icing sugar over the top. Cut into squares.
